Today we’re sharing one of our most requested comfort food classics—King Ranch Chicken, straight from the kitchen of our Canton-Mulberry residence’s head cook, Toni Pool.
This crowd-pleaser layers tender chicken, creamy Velveeta, and crunchy chips into a cheesy, hearty bake—perfect for family meals or community gatherings. From our table to yours—enjoy:

King Ranch Chicken
Recipe by Head Cook Toni Pool
Ingredients:
- 1 bag Tostitos chips
- ½ package Velveeta cheese
- 1 can cream of chicken soup
- 1 onion, diced
- 1 bell pepper, diced
- 1 jalapeño, diced (optional, for heat)
- 2–3 cups cooked chicken, cut into small pieces
- Mozzarella cheese, shredded (for topping)
Instructions:
- Prepare chicken: Cook chicken and cut into small bite-size pieces.
- Layer chips: Place Tostitos chips in the bottom of a baking dish and lightly crush.
- Cheese mixture: Melt Velveeta and stir together with cream of chicken soup until smooth.
- Vegetables: In a skillet, sauté onion, bell pepper, and jalapeño until softened.
- Combine: Mix chicken, sautéed vegetables, and cheese-soup mixture together. Pour evenly over chips in baking dish.
- Bake: Place in preheated oven at 350°F and cook for about 1 hour.
- Finish: About 10 minutes before done, sprinkle shredded mozzarella on top and allow it to melt.
- Serve: Let rest for 5 minutes before serving.
